Easy Chicken & Potato Curry. (FakeAway)

I’ve said it load but I just love a curry, I cant believe that in March this yr I couldn’t cook and now I can rustle up anything at any time, My skills are growing all the time and I love cooking and enjoy making my family happy. Im by no means a chef yet. I don’t know the terms or the basics. However I enjoy creating new flavors and depth to foods especially Curry.

I have some new curry going on every weekend. This pleases Neil greatly I think its our love of curry that’s kept us together so long.

This is a really really basic curry with a great taste, its time consuming, which can be a no for some slow cooker users, The end result is so worth it and once the legs works done if your popping in and out during the day the smells drive you insane in a good way.

Ingredients

NB when preparing ingredients those in the same color can be mixed in the same bowl as they are used in the cooking process at the same time. Those in black are to remain separate.

  • 1 tbls of Oil to cook, May need more less use as little as you can.easy Chicken & Potato Curry 3
  • 500g chicken breast or thigh. Diced.
  • 2-3 potatoes (paleo use sweet potatoes) chopped into bite sized chunks.
  • 1 tsp turmeric.
  • 1-2 Onions Chopped finely.
  • 2 cloves Garlic smashed and chopped roughly.
  • 1″ Ginger Grated or chopped finely.
  • 2 Hot Chilies with seeds chopped finely (or however many you can handle).  Remove seeds for milder.  How I cooked it, it was about madras heat.easy Chicken & Potato Curry
  • 1/2 tsp salt.
  • 2 tbsp Garam Masala.
  • 4 beef tomato or 7 normal tomatoes. Chopped into quarters.
  • 2 chilies for the top punctured for the heat freak. (optional)
  • Fresh coriander chopped. (a must for the end of any curry do not avoid it freezes well so I always have some in)

Method

Always lightly oil the Hot Pot before use this helps with cleaning and preservation of the Hot Pot.

  1. Heat the oil in a large heavy sided frying pan medium high heat, Add the Chicken and brown.
  2. While this is browning add your potatoes into a bowl and sprinkle on the turmeric stir well and pop in the slow cooker on low.
  3. Add your browned chicken to the Hot Pot/Slow cooker too. Cover on low.
  4. Brown the onions in the frying pan with the garlic, ginger, chilies, salt and brown for about 5 minutes and stir in the Garam Masala.
  5. Add the tomatoes, and cook down until a sauce forms pressing the tomatoes into the onions as you do.
  6. Once a sauce has formed pour this into the slow cooker. Mix it all well. Add the chilies (optional)
  7. 15 minutes before you eat add the coriander leaves on top. Cover for 15 minutes.

I serve this with homemade Turmeric Rice, Nan bread and home made raita.

NB: This is posted under Milk/Egg/Soya/Gluten free, and Paleo. For gluten free and paleo serve with just rice.
