Lasagne in a Pot?

Details:     Prep Time = 25 minutes       Cooking Time =   2.5 hrs low.     Serves= 4

This is my 2nd week running that I have made a lasagna in my pot. My first attempt although palatable was not delicious, Lets say it didn’t make the grade.  I used mushrooms which are great but I didn’t put in a fresh chilli which is kinda my addiction, my thing. I used other herbs thyme and red wine too.

Along with making a white sauce from scratch, Which was a disaster first time it was a stogie mess.I used self raising instead of plain flour and then burnt it to a congealed lump of nothing. My 2nd attempt at sauce on the same day was better. Today I have just used cheese, why not?  how much simpler than messing about on the hob.

I’m doing another one this time dairy free. It will be the same as this but I want to try out different vegan cheeses to see if they work as so far I have  not found one me or my boy can eat. I will update this one when I do.


NB when preparing ingredients those in the same colour can be mixed in the same bowl as they are used in the cooking process at the same time. Those in black are to remain separate.

  • 2 tbls of Oil to cook, May need more less use as little as you can.lasagna 7
  • 500g beef mince.
  • 1 Onion Chopped finely.
  • 3 cloves Garlic crushed and chopped roughly.
  • 1 fresh red medium strength chilli Deseeded chopped finely.
  • 3 tsp Oregano.
  • 1 tbsp Italian Seasoning. ( I found this  in the spice aisle)
  • 2 tbsp red wine vinegar.
  • 2 tbsp of tomato puree.
  • 1 beef stock. (to sprinkle)
  • lasagna sheets. (I used 2 per layer = 6)
  • 100g Parmesan. Grated
  • 100g Mozzarella. Sliced.

Always lightly oil the Hot Pot before use this helps with cleaning and preservation of the Hot Pot.

  1. Heat the oil in a large heavy sided frying pan medium high heat, Add the beef and brown remove with a slotted spoon. put aside.
  2. Remove the fat from the pan leave a sm amount  to fry the onions in.
  3. Return pan to the heat fry the onions until soft, stir in the garlic & chilli fry until aromatic add the oregano, Italian Seasoning, red wine vinegar & tomato puree. Bring to the boil and Stir the minced beef back. Now sprinkle in the beef stock cube.
  4. Remove from heat.
  5. Now Make your lasagna. I recommend lining your sc with  foil or s/c liners as this is a messy dish.
  6. A layer of sauce, lasagna sheet  (you may need to break it to fit don’t worry about being too precise as long as there is a layer. smaller pieces make it easier to serve), sauce,  grated parmesan,  slices of mozzarella, lasagna.  Repeat  and on the top layer add a sprinkle of parmesan. ( push the edges of the lasagne into the sauce to stop it wrinkling up).
  7. Cook on low for just 2.5 hrs when the pasta on the top is cooked the rest is too. (if mince has cooled cook on high same time if mince is hot low 2.5hrs)

I served this with a side salad.

Handy hint to absorb some of the oil from this dish use bread to soak some of it up.  It works a treat then put it out for the birds I have been told they love it.  Remember  the Best tip is brown the meat and drain in the early part of the recipe to remove a lot of the fat.
