Tomatoes Packed Tight with Yummy Mouthwatering Delights. (Couscous, Mint, Basil, Chilli & Garlic.)

 Details:     Prep Time = 15 minutes.      Cooking Time =  1.5 – 2 hrs on low      Serves =4 (you could uses smaller tomatoes as a starter)

This was an absolute hit, with all the family, My little free from boy had this with toasted pine nuts and he loved it.  My daughter said “Yuck I don’t like tomatoes” I told her to try some. “Mom I don’t like it, I love it” they both ate the lot.

Neil wasn’t looking forward to this tea but he was surprised how nice it was.

I loved it sooo much.

I will say, if you can get them out of the pot onto the plate in one piece. well done  I made a right mess.  Train smash or not these were absolutely fantastic. And best served hot hot hot.

I know I served with Halloumi but for dairy free or weight loss serve with pine nuts or even grilled bacon. yum or grilled polenta if your vegan.


NB when preparing ingredients those in the same colour can be mixed in the same bowl as they are used in the cooking process at the same time. Those in black are to remain separate.

  • 4 beef tomatoes.Stuffed Tomatos 1
  • 2 cloves Garlic smashed and chopped roughly.
  • 1 green finger chili  chopped roughly Hot, Medium or mild (depend on you)To make it milder remove seeds.(I used hot and whole )
  • 1 tsp Ground Allspice.
  • 1 veg stock cube.
  • 2 Sprigs of fresh basil chopped roughly.
  • 2 Sprigs of fresh mint leaves only chopped roughly.
  • 1/2 a courgette chopped into sm chunks.Stuffed Tomatos 2
  • 150 g bulgur wheat & whole wheat couscous mix (can buy ready mixed or just use one or the other same thing really. Don’t use a ready flavored packet mix tho)
  • 250g Halloumi Cheese. (See below too for  Dairy free also its grilled separately so leave it off the dairy free plate)
  • Pine nuts toasted (optional) if you can’t have dairy I would recommend these instead of halloumi thats how my son had it and he loved it. Or you could have it with grilled bacon. Or grilled fried polenta.


Always lightly oil the Hot Pot before use this helps with cleaning and preservation of the Hot Pot.

  1. Wash the tomatoes and slice off the top, Now remove the core. Only the hard bit and discard. see picture.Stuffed Tomatos
  2. Using a spoon remove all of the insides and put the seeds and juice into a bowl and the hard parts into a blender pot.
  3. Salt the insides of the tomatoes and turn upside down.
  4. Add into the blender pot (with the tomato insides) the chilli, garlic ground allspice and the veg stock cube .  Wizz it together and now pour it back into the seed and juice mix. (I use a stick blender I’m lazy. it’s just as good).
  5. Add into the bowl add  the bulgur wheat couscous along with the basil, mint & courgette. Then season with lots of black pepper and a sprinkle of salt. Stir this well.
  6. Now re suff your tomatoes put the lids back on and place into the slow cooker (use foil balls if falling over) cook on low for 1.5 hrs. No lid lifting it need its 1.5 hrs.
  7. In a sm pan, no oil dry fry the pine nuts until  lightly toasted.
  8. Half a cm thick  slices of  halloumi and grill for about 5 minutes turning halfway until its how you like it browned slightly or really crisped up.

I serve this with Halloumi for me, Neil and my daughter. For my Dairy free son toasted pine nuts.
